Ramen Cacio e Pepe - Mythical Kitchen
I am trying another ramen recipe from Mythical Kitchen, a channel on YouTube. The first one I tried was their French onion ramen soup, which you can read about here: http://ramenobsessed.blogspot.com/2020/04/french-onion-ramen-soup.html. This time, it is cacio e pepe (cheese and pepper in Italian).
This wasn't my most favorite thing I have ever made. In fact, I would probably file it under "Tried it once, that was enough." It tasted okay but it was pretty much just a heavy carb/sodium bomb and I think my body was aware of that fact. However, I cooked this meal using like 30 cents of ingredients so if you are on a budget like a college student, or in prison, this might be something you look at doing.
I boiled some water and threw in my maruchan brick of noodles for 3 minutes. At the same time, I melted 2 tbsp of butter into a pan. After the ramen was done cooking, I threw it in the pan with the butter and tossed well, also adding a bit of the starchy pasta water (about 1/4 cup) to the pan to make a sort of sauce. Prior to starting to cook, I poured 5 packets of the parmesan cheese you get from getting pizza delivered and put them in a bowl. I dumped most of the bowl into the pan and stirred well, thickening up the butter sauce. I also added approximately half a packet of the ramen packet for additional seasoning and continued to cook for a couple more minutes, making sure most of the sauce was absorbed into the noodles. I plated the noodles, added the rest of the parmesan cheese to the top, and covered with black pepper.
