Breakfast Ramen - Morning Chalk Up

This recipe was shown to me by one of my Crossfit coaches (Coach Emily A) from a fitness newsletter called the Morning Chalk Up So if the newsletter had it, it must be healthy, right?  

I boiled a pack of ramen noodles (I threw away the seasoning packet), drained them (reserving a splash of water), and added a drizzle of sesame oil so they wouldnt stick.  Then in a pan, i cooked two pieces of bacon to my desired level and removed them, chopping them up into bite sized pieces.  I then threw the cooked noodles into the pan and stirred it into the bacon fat.  In a bowl, I mixed an egg and a handful of shredded sharp cheddar cheese and poured the egg mixture into the pan, coating the noodles and cooking the mixture. I used a splash of reserved pasta water to loosen everything up a bit.

The noodles went into a bowl and some bacon and chopped green onions were put over it.  I also added a piece of seaweed to finish it off and drizzled the whole thing with some sriracha and some black pepper.  That is all she wrote.  The bacon fat mixed into everything gave it a very rich note that was a little too much for my taste.  I think if I skipped the part of tossing everything in the bacon fat, I would have enjoyed it more because the egg and cheese mixture in the noodles made it very creamy and the bacon and green onions on top tasted quite pleasant.  But now I know breakfast ramen with bacon and eggs can be done!
