French Onion Ramen Soup - Mythical Kitchen

So I tried something new and kind of weird but it turned out really good: french onion ramen soup.  I got this from a YouTube channel called Mythical Kitchen.  Hear me out before you come after me with a pitchfork.

Caramelize onions (I only had half of an onion) in 2 tbsp of butter and dump ramen season packet in it on top of the onions.  Cook the onions for about 15 to 20 minutes until they are very soft.  After that, deglaze the pan with something (I used a splash of Shaoxing cooking wine) and scrape up all the yummy bits that are sticking to the bottom of the pot because that is flavor!  Dump in two cups of water and the instant noodles and cook until the noodles are done.  The type of ramen I am using took 3 minutes.  Once the noodles finish cooking, sprinkle some shredded or grated cheese on the top (any type, I used sharp cheddar) and stick it in the broiler for a few minutes to get the cheese all nice and melty and the soup bubbling.

The end result really tastes like a french onion soup with noodles in it.  If you like french onion soup and you have some leftover onions and a 25 cent packet of ramen, give it a try.  You can't go wrong with this soup in this quarantine.
